Strawberry Mojito Recipe !!!

Recently, my daughter and I went strawberry picking at the local farm in the town next door, Jones Family Farms. We had soooo many strawberries that we immediately went to work making all things strawberries.


Now, a strawberry mojito is definitely an adult beverage so I did this recipe all by myself.


If you've never had a mojito, then you must try one. It's a traditional Cuban cocktail made with white rum, simple syrup, mint, lime and club soda. I don't eat or drink too many foods or beverages with mint in them, but this cocktail is an exception!


And with all the strawberries I picked, it was only natural for me to throw a few of them into the cocktail too to make a slight change to the original. Muddling the strawberries and mint is all the key, I'll explain below!


Ingredients


1 1/2 ounces white rum (I used a rum infused with coconut water)

1 ounce of simple syrup (instructions below)

1/2 lime

handful of mint leaves, stems removed

handful of strawberries, stems, leaves, and hulls removed

club soda or sparkling water

ice



Directions


In a tall glass, place the mint leaves and strawberries and muddle -- with a back of a metal or wooden spoon, press and mash to release the juices.


Make the simple syrup by putting 1/4 cup water and 1/4 cup sugar in a small saucepan and slowly simmer until sugar has dissolved.


Put ice, simple syrup, rum, and juice of 1/2 lime into the glass. Top with club soda and garnish with lime wedges, strawberries and mint leaves!
