Pink Lemonade Poprocks Martini Recipe

I love martinis. It's my go-to cocktail when I'm out and my favorite is the Cosmopolitan. I was an avid Sex & the City watcher (I know I'm dating myself!!!) and when the the SATC foursome were drinking them at Samantha's birthday ("Why did we ever stop drinking these? Because everyone else started"), I knew I had to try it!



Now years later, I think I've tried, ordered, mixed many different combinations of cosmopolitans and martinis and I keep searching for more and other variations. I like experimenting with fun and fruity flavors and this one hits the spot for spring... with an added surprise ingredient of a childhood favorite candy!




Ingredients

  • 1 to 1.5 ounces of pink lemonade vodka

  • 1 ounce lemonchello liquor

  • 1/2 lemon, freshly squeezed

  • 1 to 1.5 ounces of pink lemonade

  • strawberry Poprocks

  • flashing novelty ice cube



Directions

Fill a cocktail shaker with ice.


Using a shot glass or your eyes, measure 1-1.5 ounces of pink lemonade vodka and pour in the cocktail shaker


Pour 1 ounce lemonchello liquor and squeeze 1/2 a lemon into the shaker and add 1 to 1.5 ounces of pink lemonade. Shake it up!


Grab the Poprocks package and either gently squeeze the package to crush the Poprocks into little pieces or pour into a little bag and gently squeeze to crush and pour the pieces into a bowl or on a plate.



Take the squeezed lemon and rim your martini with the juice and roll the edges of the glass in the pop rocks (the moisture will most likely activate the Poprocks and you will hear some popping, that's ok!)


Pour the Pink Lemonade Martini into the glass, add a floating flashing novelty ice cube and enjoy!
