Holy Moly -- Guacamole Recipe !!!

With Cinco de Mayo right around the corner, I texted my cousin, Paul (who is a big foodie like me) and asked him for his homemade guacamole recipe.


He would make his version of guacamole for all the family parties and family vacations and it's DELICIOUS and so easy!


Pre-pandemic, my immediate and extended family would take a vacation every year... 16 of us!... usually staying in a rental home all under one roof... I will definitely write more about THOSE experiences soon (but click here for our previous trip to Mexico) but in the meantime, here's a pic of Paul & me on one of our infamous family vacations.


Ok, back to the guacamole recipe, Paul just eyeballs his recipe but for those of you who need exact measurements of ingredients, I did my best to list them below, but sometimes, winging it produces great results!

ONE LAST THING! Don't forget, you can kick this recipe up a notch with lots of jalapenos... and you can dial it back a notch with less cilantro (especially if you think it's tastes like soap, which I personally don't think so, but some do).


Ingredients


  • 4 ripe avocados

  • 2 jalapenos

  • 1/4 white onion, chopped

  • 1 lime

  • bunch of cilantro

  • salt


Directions


Using your avocado knife, cut the 4 avocados down the middle, remove the pit, scoop out the avocado and mash it in a bowl.


Cut up the jalapeno (throw the stem out) and chop into pieces (remove seeds and discard if you want less heat) and add to avocado. Add the chopped onion, squeeze the juice of 1 lime (with the lime juicer) and add to avocado.


Chop up A LOT of cilantro (leaves only, avoid the stems) and add to bowl. Sprinkle avocado mixture generously with salt, serve with tortilla chips... and now you have Paul's Holy Moly... Guacamole!!!
