Chicken Soup for the Knee -- The Perfect Chicken Soup Recipe !!!


My middle child, (whom you met in this article) is a bit of a "cat with 9 lives"... what I mean is: he seems to have the most bad luck when it comes to his health & well-being.


He's:


-- fallen off his bike badly enough to leave a facial scar

-- got hit in the face with a baseball & almost lost his 2 front teeth

-- narrowly missed being hit with a heavy door

-- and a few other things that I will save for a later article...


but this time, it's his KNEE... multiple baseball injuries that left him with a torn lateral meniscus at 13 years old.

Sports injuries are commonplace, I know that, but when it's your own child, it's your entire world that has been turned upside down.


I sit here writing this article in the parking lot of the local hospital because due to Covid rules -- only 1 parent is allowed in the waiting room -- so I'm in the parking lot... and here is where I wait.


I already promised him I'd make all his favorite foods and treat him like a king when he gets out. I will dote on him like he was a baby until he's well enough to resume normal activities and then I will dote on him some more. In fact, I will dote on ALL my children because sometimes we take for granted what we have and as a mom now for almost 17 years, I need to remind myself that in an instant, things can change like... THAT.


My son requested some comfort food for when he got out of the hospital and I knew EXACTLY what to make him.


Chicken Soup is Good for the Soul... so I know it's got to be Good for the Knee, read on to learn how to make my mother's Homemade Chicken Soup (which she learned from her mother-in-law), which I've aptly named:


CHICKEN SOUP FOR THE KNEE


Ingredients


4 big chicken breasts, with skin & bones

8 cups of water

5 chicken bouillon cubes

1 medium white onion, chopped

2 pound bag of carrots, peeled and sliced into coins

1 package of celery with tops, sliced

parsley, stems removed

salt & pepper

pinch McCormick all spice

2 tablespoons Better Than Bouillon chicken base

1 or 2 packages of No Yolks noodles or egg noodles



Fill a large pot with water, add chicken with skins on, bouillon cubes, chopped onion, celery, carrots, parsley, salt, pepper, & a pinch of the McCormick all spice.


Boil everything for about 45 minutes. Take chicken breasts out of pot, cool and de-bone and de-skin & shred.



In the pot, add more water or chicken stock, if needed. Add shredded chicken back in and add 2 tablespoons of Better Than Bouillon chicken base. Cook another 20 minutes.


In another pot, cook No Yolk noodles separately according to package direction, al dente. Drain and set aside.


In a medium bowl, add desired amount of egg noodles, desired amount of soup & more fresh parsley, enjoy!
