Poached Egg & Avocado Toast Recipe

I've been eating avocados long before Avocado Toast became popular: guacamole & chips, smeared on bacon, egg & avocado breakfast sandwiches, and of course on cobb salads. So, it was no surprise to me, when avocado toast as a meal became super popular.

Avocados are the BEST!


And because my love for Mexican food runs deep, I integrate avocados into A LOT of my meals -- funny thing is: avocados do have that short shelf life. So you will see me touching avocados in the grocery store to get the right firmness: too hard and it won't ripen by the time I need it, too soft & it will be brown and mushy.


Like bananas (or the 3 bears), the avocados for me, need to be "just right."


So how do you get it "just right," -- make sure you PLAN when you are eating, making, serving your avocado in what dish. Guacamole: pick firm avocados at least 2-3 days ahead of time to make sure they are the right firmness for your meal -- if you are planning same day, you need a semi-soft avocado, but not squishy.


I know, it's tricky, but worth it -- so PLAN!!!


This Poached Egg & Avocado Toast is quick & easy, needs a softer avocado so you can mash or smear it on the toast. And if you don't know how to poach an egg, keep reading and I'll tell you!!!


Ingredients

1 piece whole wheat toast

1 ripe avocado

1 egg

a few radishes

alfalfa sprouts

drizzle of Trader Giotto's Balsamic Glaze

salt & pepper


Directions


Toast a piece of whole wheat bread (or bread of your choice).


Meanwhile, fill a medium pot with water (you can add some white vinegar and a pinch of salt, but I was lazy and didn't do that) and bring to a boil. With a wooden spoon, swirl the water in a circular motion to make a "whirlpool." Crack an egg into a ramekin and pour the egg into the center of the "whirlpool."


Cover the pot with a lid, set a timer for 5 minutes and turn off the heat.


Take the toast, smear or mash a 1/2 of the avocado on it. Slice a few radishes (discard the ends) and arrange on avocado.


When the timer goes off, carefully remove the poached egg from the hot water and place on the avocado toast. Season with salt & pepper, sprinkle with alfalfa sprouts & drizzle with Trader Giotto's Balsamic Glaze. Now you've got Poached Egg & Avocado Toast!
