Annie's Tomato & Basil Tart Recipe

Many years ago, my mother, Anne Marie, debuted her Tomato & Basil Tart appetizer--affectionately known as "Anne's Famous Tomato Pie"--at a family party and we were all hooked! It's filled with juicy tomatoes, fragrant basil, garlic & a medley of cheeses. Guests were smitten and asked for more... if her Tomato Pie wasn't at a particular party, it was requested for the next.

Super easy & delicious, don't make one... make 2 and dazzle your guests...they will ask what it is, and you will tell them...it's Annie's Famous Tomato Pie!!!!
Ingredients
1 premade pie crust (the one you roll out)
2 cups of shredded mozzarella cheese
5 plum tomatoes or 4 regular on-the-vine tomatoes
1 cup fresh basil leaves
2 gloves of garlic
1 cup of mayonnaise
1/2 cup Parmesan cheese, shredded
1/8 teaspoon white pepper
olive oil


Directions
Preheat oven to 350 degrees.
Lay pie crust in pie plate, flute edges and prick with fork to allow steam to release.
Partially bake slightly for 10-15 minutes at 350 degrees (watch it!)
Sprinkle 1/2 cup mozzarella cheese on the hot crust, allow to cool.
Cut tomatoes in thin wedges (not too thin), seeded & drained.
Arrange tomatoes on the cheese.

Blend basil & garlic in food processor (use a bit of olive oil to make a paste).
Sprinkle mixture over the tomatoes.
Mix mayonnaise and 1 cup of mozzarella cheese and 1/2 cup of Parmesan cheese and pepper together and spread over the basil/tomatoes.
Top with remaining shredded mozzarella.
Bake for 35 minutes at 350 degrees.
If crust is browning too much, cover crust only with strips of aluminum foil or crust protector.
Cut into 6 pieces... ENJOY!!!!
